Fish and Chips Recipe


Do you like England Fish and Chips with all the crispy batter and the moist flaky fish in the inside and through and through. Have you every wondered how can they get it this so good in taste and they always seem to get the  coating just perfect all the way around.

Well,  here it is, that same as you would get on an order out at your favourite Fish and Chips place. All here in an easy step by step instructions.

Recipe:

1 lb or more of filet of fish  (no skin)

1 1/2 Cups - All-purpose flour
1/4  Cups - Extra all-purpose flour
1 Tsp. - Baking soda
Squirt of lemon

1 Cup of beer  or  1 Cup of soda water

Extra water as needed

Salt and pepper to taste.

Now as for the type of fish, that depends on you. As long as it is a med-hard flesh fish it will be alright. Just ask your Grocery  Market for advice on it.

Here I am using  walleye, but you can use cod, halibut, or panga. So with so many varieties, you really can not go wrong.



Remember that the fish as to be free of the water  possible, especially if it was frozen. Us a paper towel on the bottom of the fish to absorb most of the liquid. 

It is very important to flour your fish and let is sit for about 10 to 20 minutes before you fry it. This method helps the batter to stick better to the fillets and does not run off. 




Go ahead and use your favourite beer, here I am using a dark beer that not only gives off an awesome flavour but a little colour to the batter. 

Now for those who prefer a non-alcohol recipe, then you can use soda water instead. 




I like to use a wok pot when I am  frying fish, because it is narrower on the bottom and wider at the top, thus giving more cooking oil surface with a lot less quantity of  oil.   


Let them go until they are slightly golden brown on each side. 






Have a rack ready on the side to dry off the fish portions. A trick if your fries are not ready at the same time. Keep your oven on low and put the rack into the oven to keep them warm until the fries are ready to serve together. 








Season the  fries when they are hot and just out of the fryer.

Wasabi Tuna Sushi Recipe




Wasabi Tuna Sushi Recipe

Do you like Sushi, do you like tuna.

This is my Western version of Tuna Sushi. It is easy and convenient because it uses can tuna. Go ahead and see how easy and good it is.

When it comes to making sushi at home, almost everyone thinks that it is an impossible task. When it is one of the easiest things to make that can give you so much satisfaction and everyone will praise you for it. Try it here now and see just how easy it is to make, you really can not go wrong.

Recipe; 

Makes 4 rolls;

1 - Can of  chunk Tuna (albacore or same) in oil or in water.

1 Pkg. of  Nori
1 Cup - Pre-ready Sushi rice

1 to 2  Tbsp.  - Mayo 
1 to 2 squirts -  Lemon juice
2  Tsp. - Wasabi

1/2  Sweet red pepper
Few stems of green onions
Bunch of parsley leaves

Pepper to taste


Homemade Sushi rice 
1 Cup - Sushi rice 
1/4 Cup - White vinegar 
1/2 Tsp. - Sugar 
1/2 Tsp. - Salt

Here you can add just about anything you would like to this tuna.

Try to toss the fish instead of a stir, so the fish can be flaky and not mashed.






As for the rice, you can prepare your own or get the pre-made sushi rice that you just bring to a boil and it is ready. 


Remember to leave the nori open on the top part so it will stick together on the roll when rolling it. The bottom part does not matter. 





Start by rolling the nori over the fish and veggies, 
keeping the everything under the rice/nori.



 Press down on the roll, then bring roller back.



Roll again, press down 
and bring the roller back. 



Roll again, to finish, 
so easy you do it by hand.



Press again and it is done. 



Cut the Sushi in bite size pieces. 



Remember to show off your work, 
make it your master piece.

There is nothing better than the smell of buttered French Toast with a hint of cinnamon coming from your Kitchen. What a special treat it is to have this dish to start your day. 

All in all,  this is one of my favourite dishes for breakfast, so easy and fast to make. Now with all the different toppings that you can have, makes this the perfect "start for you day". As for me, it is butter, cinnamon and the best of the best "Canadian maple Syrop". 

Go ahead and try this awesome recipe and please tell me what did you add for the toppings.

Recipe;

4 Slices  - Sliced toast bread or any other type of bread.
1 - Egg
1/2 Tsp. - Vanilla extract
1/4 Cup -  Milk
Butter as needed

Toppings;
Butter
Cinnamon
Maple syrup
Icing sugar
Any fruit

What other breakfast can you make for your family that is so fast and easy. This combination of the bread, egg and toppings, makes this an outstanding dish. 







Make sure that you beat the egg mixture, very well until it is velvety smooth. Use a large plate to lay down the bread slices to soak up all the mixture evenly. 







Let the bread slice soak for at least 5 minutes or longer. In this way, the mixture will be soaked into the middle  of the bread, and thus making it moister all around. 



Once you add the bread, do not move it  for about a 1/2 minute,  so the mixture will solidify to the bread. If you move it at this stage, then it will go all over the place and  make a mess.   




Now go ahead and add your favorite toppings and make it your way. Do not forget to make extra because your Family will ask for more and you do not want to run out.

Blueberry Pancakes Recipe


I have to say that "I just love Pancakes" and for me I add many different toppings from almost every fruit, berries and even chocolate syrup. 

After making  many of them, I found out that I can really make a huge batch in a matter of minutes, mind you that would use two pans with about 3 pancakes in each.So do not be afraid to try this recipe for it is really that easy, you can not go wrong. 

My guests and family that have  a sleepover in my home, just love to wake up to a huge plate of these awesome pancakes. The only problem I have, is keeping up to their appetite. After all, they want to try it in many different ways, for I make sure there are enough batter and toppings. Always a  the best way to start the morning.

Recipe:

1 1/2 Cups - All purpose flour
1/2 Cup - Milk, plus more as needed
1 Tsp. - White or brown sugar
1 Tsp. - Baking powder
1 Tbsp. - Cooking oil or butter
1 Tsp. - Salt
1 - Egg

Makes   2 Pancake servings.

Topping
3/4 Cups - Blueberries

In the video, I am using all-purpose flour, but if you want you can use a 50/50 of whole  and regular flour. 

Also,  try it with about 25% buckwheat or even instant oatmeal. Anyway, you make it, it will be awesome. 



After adding the 1/2 cup of milk, keep adding more milk a little at a time. In this way, you will always have control of the thickness of the pancake. 

Keep stirring and adding milk until the batter sticks to your whisk but flows down slowly in a steady stream and  off your whisk. Remember  not over stir the batter, stop when it reaches the above point.  


Use a Teflon pan and make your life a lot easier, Now you do not have to add any oil to this type of pan and it will work well, but after awhile they just do not do the job as good as when it was new. So I find by using a little oil, it helps it along, cook more evenly and the pancakes look better



I make  my pancakes a little bit on the smaller side because I like them to be piled up high, for me it just looks better. Now really the size depend on your preference that suits you. Larger or smaller will not change the taste, only the appearance.





When you see the bubbles coming to the surface of the batter, then you know that it is time to flip it over. Now, if you are not sure of the timing of your pancake, then when you see the above, just it it a pick under it one or two time. After a few, you get then hang of it and become an expert. 







Remember, do not push the pancake down and try to flatten it, for it will make them chewy and hard.

McDonalds Spicy Chicken Copycat Recipe

I have to admit that I really like this Chicken Spicy Burger from Mcdonalds, but I can not keep going out to the restaurant and getting my fill. So after a but a few try's,  I finally came up with the recipe that is very close if not right on the money to the original. 

It is so easy to make this sauce that I found myself making more and more, after all it is right out of my own home and I do not have to go out. 

Go ahead and give it a whirl and let me know how yours turned out.

Recipe;

1 1/2 lbs. - Chicken breast

Sauce
3 Tbsp. - Mayo or low-fat mayo
1 Tbsp. - Sugar
1/2 Tsp. - Garlic powder
1/2 Tsp. - Ground turmeric
1/2 Tsp. - Ground cumin
3/4 to 1  Tsp. - Chilli

Splash of milk as needed

Salt and pepper to taste.

Flour Mix
1 to 1 1/2 Cups - All purpose flour
1/2 Tsp. - Garlic powder
1/2 Tsp. - Onion powder
1/2 Tsp. - Pepper, black or white
1/2 Tsp. Salt (option)


Egg Wash
2 - Eggs
1/4 Cup - Water

It is very difficult and a waste of chicken meat to try to get the cuts perfectly round.  So they will be a little square and not so round, but they will fit on your bun and be just as awesome. 







I like to flatten the breast a little with the flat side because it makes the meat more even and it will cook better. 

Use a plastic wrap in order for the meat juices not to fly back at you. 

 At this stage of making the flour mix, I have not said anything about adding salt. The sauce is strong enough in  taste with the heat and other spices that it is not necessary to add any salt to the flour. 

Now, myself being  Portuguese Canadian I tend to like things a bit more on the salty side. So this is really up to you, add more or not. 


When working keep everything as close to as possible. In this way,  you will be more organized and there will be less of a mess. 

Don't forget, here it's ok to double-dip. 







Cook the breast for about 3 to 4 minutes on each side, but please do not over cook it because the meat will turn hard and dry. 









Go ahead and add as much sauce as you want, after all this is your burger and you can  have " It Your Way". 

Also, if you want you can add other toppings including tomatoes to it.

Pork Cutlet  Recipe
This pork cutlet is so easy to make and with the breaded crust, it is a must for you menu. Where can you find something this good that only takes about 20 minutes to make and is  awesome. I find that this dish goes good with all kind of side's, especially potatoes and  diced beets. 

However you serve it, please make sure that you make some extra because your Family and Friends will ask for more, I know.

Recipe:

2 lbs. - Pork loin or tenderloin

2 - Eggs
1 Tbsp. - Veggie stock
1/2 Cup - Bread crumbs

Salt and pepper to taste

I was using pork loin, but if you prefer you can use pork tenderloin. I like to slice them about 1/2 inch thick and then pound them down  to flatten them out. In this way, the pork becomes more tender but still is moist in the middle when you cook it. 





Make sure to cover the pork loin slices in plastic foil so it will not make a mess when your are flattening them. 

Use the smallest triangle edge of the mallet for we do not want the meat with large holes in it. I use an old cutting board for this because the hammering will indent your board. 




Move everything you need close to you, so it will be easy to move things around, also it will make less of a  mess. 







Cook the cutlets on medium heat for about 3 to 4 minutes on each side. Please be careful not to overcook them because they will turn out hard and not moist. 







Always use a plate with some paper kitchen towels to soak up the extra oil. After all, there is nothing worse than having you cutlets sitting in oil in the serving plate. This just makes them soggy and bad tasting.

Going to have a Party or a Gathering for the kids or the Grown-ups. Well here is the perfect meal or treat that everyone will love.  It comes complete with a handle and a coating that is sure to please. 

Get some dipping sauces and you can never have enough of them, with all the different varieties, it will never keep anyone back asking for more. Now I would advise you to make some extra and store them in the fridge, for I know you will need them. So just pre-make them for your Party,  then "heat and serve" them in the micro, oven or pan, they will always turn out awesome.

Recipe:

1 Cup - All purpose flour
1/2 Cup - Corn meal or corn flour
1 Tsp. - Baking powder
1/2 Cup - Milk, plus some extra
3 Tbsps. - Sugar
1 Tsp. - Salt

 1 - Egg

Here I am using some hotdogs that are made especially for children. They are 85% meat with some veggie added to them. 

Now you can use your favorite hot dogs,  you could use turkey or chicken also, it would turn out the same. So that really depends on you, come on "give it a try". 





Again I will remind everyone that if you use these type of sticks, please remove the sharp tips from the end. After all, I do not want anyone hurt when they are going to eat them. 

The tips are extremely sharp. 





Remember to soak the wood sticks in plain water for about 20 minutes before using them. In this way, they will not burn when added to the hot oil. 

Push the wooden stick all the way in about 3/4 of the way. It is not necessary to go right through to the other end.





I like to use corn meal because I find that it gives a more full and all-round hearty taste to the corndogs. Now if you want you can use some corn flour instead. Anyway, you do it, it will turn out awesome.







Drop your hot dog all the way in and twist it around for the batter to stick to the meat. Allow it to drip a little while you are constantly twisting it to get an uninformed coating. Please be careful dropping the corn dog into the hot oil, for it could splash back.
