Gral Indoor Pork Ribs

Gral Indoor Pork Ribs

Goral literally "highlanders" are a group of indigenous people found in southern Poland

For most Gral today, the decisive factor in their self-identification with a nationality is not ethnic but territorial. For example, those living in areas under a long tradition of belonging to the Polish state identify themselves as Polish, while those living in Slovakia have identified themselves as Slovaks, with notable exceptions to this rule on both sides of the border. While the origin of the Gral dialect is Polish, the language of Gral in Slovakia and in the Czech Republic is gradually shifting and increasingly becoming more similar to the literary standard in their respective countries.

The Gral cuisine is part of their culture. It is mainly based on greasy meat and cheese. Of all meats, pork, lamb and mutton are the most popular ones with the Podhale Gral. The most famous food, making the Gral and Zakopane famous all over the world, is the ''oscypek'' salty sheep cheese in the shape of a spindle. Some smoke it.

So since I have been now other seven-times to Zakopane and I love the Tatra Mountains, but the food there is mostly BBQ and I can not stop eating. Mostly I eat at the same restaurants and it is always a big portion of BIG juicy BBQ ribs, and yes it comes with all the sauce you could want.

Now I brought it home for anyone to try it. I made this one in the oven but go ahead and make on your outside grill and see how good this recipe is.

Please let me know how yours turned out and did you added anything different to it.

Recipe;

2 Kilos (5  lbs)  Hearty Spare Ribs.

3/4 Cup - Brown sugar
1 Tbsp. - Onion powder
1 Tbsp. - Garlic powder
1 Tbsp - Oregano
1 to 2 Tsp. - Cumin
1 to 2 Tsp. - Cayenne pepper
1 1/2 to 2 Tbsp. - Smoky paprika
2 Tbsp. - Orange zest
1/2 to 1 Tbsp. - Salt
1/2 to 1 Tsp. - Black pepper

For more information, please see video below.

***********************************************************************************************************

Go ahead and get them Big, as big as you can. Now to get them this large you may have to go to aButcher and have him cut them up for you like the picture.

It will be well worth it and you will not regret it for the little extra trouble to get the cut.

Steaming helps the softening of the spare ribs to help cut back the cooking time. We want it to a point that when the ribs are done, the bones are just falling off the meat.

This process can be used for indoor oven roasting or for the outside grill, either way it will turn out tender and flavourful.

After rubbing it with the spice mixture, center them in a large flat baking pan that has a grill so we can get an even cooking, all around.

Add some water to the bottom so the oven will be kept moist during the cooking time. remember, if the outside is starting to dry up too fast, then cover the ribs with tin-foil in the last 1/2 hour of cooking.

Use one of your oven mitts to help cut up the ribs to make your life a little easier. Remember to let the ribs rest for about 10 minutes before you start to cut it.

This cutting board was hand made be a Gral from Zakopane. Not only did he make it, but he got the wood from his forest, dried it for 6 months and handmade it from scratch.  He also makes a lot of other hand carved wood products, too many to show. Hoping to have a link someday so others can order some of his crafts.

Mini Meatballs In Spicy Tomato Sauce

Mini Meatballs In Spicy Tomato Sauce

I always like finger foods that are spicy and just pop into your mouth with just one bite and explode with full flavor into a great tasting treat.  I just love to make this ahead of time, I make many just a few days before a Party or a Gathering to freeze ahead of time. They really freeze easy and for some reason they even taste better when you do this, for they marinate and all  the flavor comes together. So when your event has started, just throw them in a hot oven and in about 20 to 25 mins. you have a delicious fast treat for your guests.

This can be served with almost any side dish, but on its own its still awesome. The only problem I have with these Spicy Mini Meatballs is that they disappear really fast and no matter how much I make, there all gone.

Please let me know how yours turned out and how your family or friends like them.

**************************************************************************************************************

Recipe;

1 Pound of med. ground beef.

1/2 Med. - Onion
1 Clove - Garlic
1 Med. Egg
1/2 Cup - Bread crumbs
1 Tsp. - Worcestershire/Maggi sauce

Salt and pepper to taste

Spicy Tomato Sauce;

1/4 Cup - Butter
1 Tsp. - Tomato paste
1 Tbsp. - Olive oil
1/4 Cup - Ketchup
1/4 Cup - brown sugar
1/4 Cup - Water
3 Tbsp. - Vinegar
1/2 to 1 Tbsp. - Paprika
1/2 to 1 Tsp. - Cayenne pepper or chili
1/3 Juice of a lemon

Alternative;
Baking - On a rack or oiled tray in a hot 180 degrees (350 F.)  oven for about 25 to 30 mins.

 For further information please see video below;

**************************************************************************************************************

I like to make this recipe by using a med. ground beef because of it's fat content, for in this way you get a more juicy and flavorful taste. Now if you want it more lean then just go with the leaner one if you are counting calories.

Make sure that your onions are minced as fine as possible because it will hold everything better when you roll them into small balls.

Add your fresh bread crumbs as per the recipe, but depending on the moisture content of the mixture, you could find that the balls are to wet and do not roll so easy and fall apart.

Just add more bread crumbs, but just a little bit at a time until you get it just right. Grab a bit of meat and just squeeze it in your fingers and see how well it holds together. If it still is to lose then add some more crumbs.

Use a teaspoon to scoop up the mixture to get it to the right size, or if you want them bigger the you can use a tablespoon.

To roll them I use only one hand because when I make a lot for one of my Gatherings, I roll one in each hand to make them faster. I would first start rolling with both hands at first with your palms. If you find that the mixture is a bit sticky, the add some cooking oil to your hands. Remember practice makes perfect".

One good idea is when your mini meatballs are done and cooled off, cover them and let them sit in the fridge overnight to marinate. Then just reheat.

To freeze them, add them separately  on a tray and freeze them until solid. When solid just toss them into a bag and store away into the freezer, By doing it in this way you will not get a Hugh clump of meat that would turnout to be a disaster.

Korean Style Chicken Wings - Dakgangjung

Korean Style Chicken Wings - Dakgangjung

Aww the famous Korean chicken wings with that awesome sweet candy like sauce with a great taste of sesame seeds and roasted peanut. I have to say that this Korean dish is one of my favorites and I hope that you try it and see what I mean.

Now please do not say that you cannot have a some of these great wings, for if you read my article on Can I Eat Fattening Food Or Fast Foods In Order To Lose Weight? , so go ahead and enjoy it. I have to say that I have lost the weight and have been eating and enjoying my wings now for over a year and I still have managed to keep it under control.

Please let me know how yours turned out and how you enjoyed it and did you make enough or you ran out after a kilo.

**************************************************************************************************************

Recipe;

1 Kilo of Chicken Wings

1/3 Cup - All purpose flour
1 Tbsp. - Corn starch
1 Tsp. - Pepper
1 Tsp. Salt
1 - Egg

Sauce;
1 Cup - Water
1 Tbsp. - Soya sauce
1/3 Cup - Brown sugar
1 1/2 Tbsp. - Ground ginger
1 Tbsp. - Sweet molasses
1/2 Tbsp. - Chili powder
1/2 Tbsp. - Sweet paprika

Toppings;

2 Tbsp. - Toasted sesame seeds
1/2 Cup - Toasted peanuts

For more information, please see video below;

**************************************************************************************************************

Wash the wings in cold water and I like to do this when the wing in one  piece  and not cut up for there will be less water getting into it and it will not splatter with it's deep fried.

I always have kitchen towels for this job for it makes my life easier and  faster.  After drying it with the towel I roll it around the wings and let it sit for a few minutes to pickup the extra water that's trapped.

Make sure that you mix it well and if you want a better taste then I would let in sit and marinade in the fridge for about an hour or longer.

This can be prepared right up to your party and as long as it's in the fridge it can stay for about 24 hrs.

Here I'am using a very thick molasses and this will give the sauce a nice all round thick sweet flavor to this dish.

Now you can substitute this with corn syrup or even honey if you want, anyway you do it, it will turn out just awesome.

After about 30 to 35 mins on med. heat the sauce should thicken up to a point that it will stick to the back of your spoon and you know that you are done.

As it is simmering during the cooking process you have to keep an eye on it en-case it burns and with a sauce thick, that can happen very quickly. So you also must keep stirring it now and then. Remember that the sauce will thicken up even more when it begins to cool.

Do not overcrowd the pot because if you do you will find that the wings will be stick together and they will  not have that smooth appearance and will look like it broke up in the oil.

It's better to do a little at a time or get a bigger pot and they will turn out great and will not only look great but will have that extra crunch that makes them all disappear fast so make extra. .

Heat up the sauce once again on high before you add the wings to it. Once you add then then turn off the heat and mix them well to get the sauce all around the wings,

Opps !!!  Now how did that get here, sorry as I took the pictures I just could not help myself. Boy were they good....

Sesame Ginger Salmon Low Calorie Magic Diet

Sesame  Ginger Salmon Low Calorie Magic Diet

I have to admit that salmon is one of my favorite fish and I could add a lot of recipes here for it is such a easy and great tasting dish. Now this recipe is one of my best choices because when it comes to soya, brown sugar and toasted sesames, I am in all the way.

Here  I have reduced the sizes in order  to have it as a low-calorie dish  that will keep me on my diet and keep my weight under control.  I know that I was adding sugar to here, but according to the  facts of dieting  in relation to having sugar in your plan is all good as long as you do not over do it.

It was hard for me to lose the weight and on eating  just things that were  good tasting, but after awhile you do crave for something else that can help you lose the calories but also helps keep your food cravings under control. So now that I have reached my goals and was a very good boy with my dieting I now can have a little extra in my meals and this recipe is just what I wanted.

Please let me know how you prepared this salmon and how it worked for you.

********************************************************************************************************

Recipe;

2 Pieces - Salmon skin one side

2 Tbsp. - Olive oil
1 Tbsp. - Vingar
2 Cloves - Garlic
1 Tbsp. - Soya sauce
1 Tbsp. - Brown sugar
1/2 to 1 Tbsp. - Ginger dry or fresh
1/2 to 1 Tbsp. - Black Treacle or honey

Salt and pepper to taste

Toppings;
- Toasted sesames
- Green onions

********************************************************************************************************

I keep the salmon flesh downwards in order to have more contact with the marinade, then it's off to the fridge for a minimum of 35 mins. Also please remember with any kind of fish that you have to use caution with it when it is at room temperature.

So please keep it in the fridge during the  storage or marinating time.

Use the leftover marinade from the fish to complete the  sauce topping. Also it is important to bring this sauce up to a boil in order to cook the marinate  and caramelize the sugars to bring out that awesome taste to your salmon.

Here I'am using my indoor grill but you can also bake the salmon and it will try out absolutely awesome. Now with an outdoor BBQ,  now we are talking with this recipe.

When you see the a lighter color coming up the side of the salmon and/or see a   light opaque color at the sides of the fish, then it's time to flip them. I know some of you like to crisp the skin first and then flip it and thats all good, but you have to be careful not to overcook it, or you it will be chewy and tough.

Veggie Diet Hamburger - Weight Loss - Magic Diet

Veggie Diet Hamburger - Weight Loss - Magic Diet

  I just love my hamburgers and I have to say that I have been avoiding them as much as possible because while being on a diet I just have no choice but to control what I eat.  So in this recipe I came up with a recipe that satisfies me with this craving for one.  Of course I will have it with a side order of other veggies and try to keep away from the fries, for that would defeat my purpose of my diet.

Now  at the start of the frying of the veggies, I do use oil but with one tablespoon  for it really does not make a big difference  when you make a batch of the mixture.  Later I added to the blender some olive oil to give it some taste to the veggies but it does not affect the oil when it is grilled because of the cooking time.

As for adding sugar to the  sauce it is so low that I would not worry about it because you are entitled  to have some sugar in your diet on a daily basis, as long as you do not abuse it.

Enough said, enjoy the Veggie hamburger and go ahead and have two if you can handle it, I am sure you will love it. Please let me know how yours turned out.

*********************************************************************************************************

Recipe;

1 Cup - Black beans
2 Cloves - Garlic
1 Sm. - Onion
1 Med. - Carrot
1/3 -  Sweet red pepper
1 Tbsp. - Cooking oil
1 Tbsp. - Olive oil
1 Tbsp. -  Parsley
1 to 2 Tbsp. - Soya  sauce
1 Egg - (Omit for Vegetarian recipe)
1/3 Cup - Bread crumbs (more as necessary)

Salt and pepper to taste.

Options;
Add  1/2 Cup - Barley (extra).
Kidney beans instead of black beans.
Bread instead of bread crumbs.

Topping sauce;
3 Tbsp. - Yogurt
1 Tsp. - Mustard
1/3 Tsp. - sugar
1/3 Tsp. - Lemon juice

Salt and pepper to taste.

Options;
Use sour cream instead of yogurt.
Use buttermilk instead of yogurt.
1/3 Tsp. - Hot sauce

*********************************************************************************************************

I like to use black beans because I find this bean to be more tasteful and it makes more of a  rich texture. If you want you can use some different beans like kidney beans or add some barley to it.

Either Way it will turn out great and the taste will kill your cravings to the meat ones and keep those pounds off.

I know a few Vegetarians that will have eggs to their diet and I used it here to provide a more nrich  recipe that should  fill you up more and hold off those hunger craving.

But for those Vegetarian Friends who do not use eggs, then just  omit the egg and it will be more  to your liking.

I use a bit extra of the bread crumbs to prevent the mixture from sticking to my board, also if you find that it sticks to your fingers, then rub some cooking oil to your hands and that should make it easier.

Remember to make your patties about the same size of your buns that you are using.

Not like grilling our meat patty, our veggie burger should be grilled at a lower temperature and a bit longer. when I see that the colour has changed halfway up the sides, then I flip it over and reduce the heat to cook it through and through.

This recipe will work great on a outdoor BBQ and of course you can also bake it in the oven on a greased tray for about  25 to 30 minutes on about 350 degree setting.

Now go ahead and add all your favorite toppings, make it your way. Just watch out for the bacon...:)

Old Fashion Hamburger - Awesome

Old Fashion Hamburger - Awesome

Aww !!   The famous North American Hamburger now what could be closer to Heaven then this when it comes to comfort food. In recipe the meat will always be soft and juice. Just awesome with a side of fries.

Yeah, I know fat, calories well ?  Just  go ahead and have one and do not feel guilty for it because you can have your desired meal once in a while and still keep your diet and weight.  I have lost about  42 kilos and  I eat whatever I want twice a week and still have managed to keep my cravings under control. How ?
Well just click here

  Can I Eat Fattening Food Or Fast Foods In Order To Lose Weight?

Please tell me how yours turned out and did you make any changes to it:)

*********************************************************************************************************

Recipe;

1 Lbs. - Medium ground beef.

1/4 Cup - Bread crumbs
1/2 Tsp. - Garlic powder
1 Tsp. Maggie, HP or worcester sauce
3 Tbsp. - Milk

1 - Sm to med. egg

Salt and pepper to taste.

Options;

1/2 to 1 Tbsp. - Soya sauce

*********************************************************************************************************

I like to use a medium ground beef because it has just the right amount of fat content to give it a nice round beefy taste. Make it the way you like for in this recipe even if you use a leaner meat it still will be moist and awesome.

Remember that the hamburger patty will shrink depending on the amount of fat in the beef.  Here I made the patty about 1/2 an inch larger then my bun, and it turned out to fit perfect.

Fry or BBQ your hamburger  until it is done about half way up the patty and then flip it over. Do not keep on flipping it more than necessary for it will tend to dry it out and then it will be tough and dry tasting.

Now go ahead and add your favorite toppings and make it your way.

Go ahead and enjoy for life is to short, bet yeah can not eat just one....:)

Walt Disney Baked Turkey Legs - Party Time

Walt Disney Baked Turkey  Legs  -  Party Time

I remember  going to Walt Disney world for the first time and  I kept seeing  a lot of people  walking around  with this large  chicken leg, it had to  an ostrich leg for it was too big, I really never seen anything like it. At this time I did like to cook and was just getting started in culinary School , so  to me that was a strange and  weird thing they were eating.

Well  I managed to track it down to these little  tiny booths and the lineup was crazy.  So in line I went, grabbed one and to my surprise they were really  nice,  juicy, smoky and   tender .  Never at that time would I guess it was a turkey for their meat is mostly  dry and bland, but it was out of this world.

I grabbed  my leg and walked down the pathway  and munched  on it like untamed animal for  I was enjoying it too much, I am now ashamed to say that I had about two a day and  every time I return to the park, I would  go straight  to the booth  and  grab one.

I really hope that you will enjoy my recipe here, for I have to say it comes very close to the ones selling in the Disney Theme Park . I have returned to the Park about  eight  times, boy ! thats a lot of turkey legs.

Try them  Mickey   would be proud..:)

*************************************************************************************************************

Recipe.....

3  Lg. Turkey legs

Brine
 Water to cover legs
1/4 Cup or less - Salt
3 Tbsp - Sugar
1 Tbsp. - Hp, Worcester sauce or Margie.
Alternative - Add liquid smoke

1 Tbsp - Olive oil per leg
1 Cube - Veggie, chicken stock

Smoke
1/2 Cup rice
1/2 Tbsp. - Sugar
1 Tbsp. - Cooking oil

Bake on a rack with aluminum foil on the bottom of the pan with 2 Tbsp of the smoke mixture and add more  to it during the baking to create more smoke.

Bake at 400 degrees for about 20 mins., and turn them around about half way through. Then bake at 200 degrees for anywhere from 45 mins to 1 hour, turning them around at least once.

*************************************************************************************************************

Make sure that you mix the brine solution very well and have the  legs completely under the waterline. At this point you can add "liquid Smoke " to it if you prefer and that will give you a stronger smoke taste.

This mixture of rice will burn off and give you a smoke taste to the legs, not as good as a smoker but the taste is not far behind. I know some add wood chips to the bottom of the pan to produce the smoke, and I'am sure it's a good idea but I do not want any wood burning in my oven, I just do not trust the method.

So easy to eat and serve. Add a piece of foil to the bottom drum and off you go walking down the street with everyone looking at you and asking where did you get that from. The perfect portable food.

Well  I just could not wait for my Friends to come over for a get together. This turkey leg was just asking me for a bite and  "I could not resist". Anyways   I did not show it on the video but I had another three in the fridge  ready to go.

Now how did this get here ?
