Walt Disney Baked Turkey  Legs  -  Party Time


I remember  going to Walt Disney world for the first time and  I kept seeing  a lot of people  walking around  with this large  chicken leg, it had to  an ostrich leg for it was too big, I really never seen anything like it. At this time I did like to cook and was just getting started in culinary School , so  to me that was a strange and  weird thing they were eating.

Well  I managed to track it down to these little  tiny booths and the lineup was crazy.  So in line I went, grabbed one and to my surprise they were really  nice,  juicy, smoky and   tender .  Never at that time would I guess it was a turkey for their meat is mostly  dry and bland, but it was out of this world.

I grabbed  my leg and walked down the pathway  and munched  on it like untamed animal for  I was enjoying it too much, I �am now ashamed to say that I had about two a day and  every time I return to the park, I would  go straight  to the booth  and  grab one.

I really hope that you will enjoy my recipe here, for I have to say it comes very close to the ones selling in the Disney Theme Park . I have returned to the Park about  eight  times, boy ! that�s a lot of turkey legs.

Recipe.....

3  Lg. Turkey legs

Brine
 Water to cover legs
1/4 Cup or less - Salt
3 Tbsp - Sugar
1 Tbsp. - Hp, Worcester sauce or Margie.
Alternative - Add liquid smoke

1 Tbsp - Olive oil per leg
1 Cube - Veggie, chicken stock


Smoke 
1/2 Cup rice
1/2 Tbsp. - Sugar
1 Tbsp. - Cooking oil

Bake on a rack with aluminum foil on the bottom of the pan with 2 Tbsp of the smoke mixture and add more  to it during the baking to create more smoke.

Bake at 400 degrees for about 20 mins., and turn them around about half way through. Then bake at 200 degrees for anywhere from 45 mins to 1 hour, turning them around at least once.

Make sure that you mix the brine solution very well and have the  legs completely under the waterline. At this point you can add "liquid Smoke " to it if you prefer and that will give you a stronger smoke taste.









This mixture of rice will burn off and give you a smoke taste to the legs, not as good as a smoker but the taste is not far behind. I know some add wood chips to the bottom of the pan to produce the smoke, and I'am sure it's a good idea but I do not want any wood burning in my oven, I just do not trust the method.






So easy to eat and serve. Add a piece of foil to the bottom drum and off you go walking down the street with everyone looking at you and asking where did you get that from. The perfect portable food.









Well  I just could not wait for my Friends to come over for a get together. This turkey leg was just asking me for a bite and  "I could not resist". Anyways   I did not show it on the video but I had another three in the fridge  ready to go.

Lazy Man's  Rose Pasta - Budget Recipe.


Rose  Pasta so Easy, so Fast and for the Budget  Minded, I  Know You Will  Enjoy  It�..:)

Sometimes you just want that simple fast meal without all the trouble and  to  find the simple  things that you have every day  in your fridge.  

With this recipe you will find that even with this  simple  cooking  dish it will have a great taste and  a dish that everyone will love. Just do not tell anyone �how� you made it, because they will think that you went to a lot of trouble to make it.

Recipe....

1/2 Pkg. of any type Pasta.
1 to 2 Tbsp. - Olive oil
1 to 2 Tsp. - Tomato paste
1/2 Cup - Sour cream plus 1/3 Tsp. salt
1 to 2 Tbsp. - Ketchup
1 Sm. - Onion
3/4 Tsp. Parsley
1/3 Cup - Milk

Salt and pepper to taste.
Add more milk as necessary.

Add about 1/3 Tsp. of salt to the sour cream in order not to just give the dish taste, but to help the cream to not curl when the ketchup is added. Also buttermilk of 100% whole milk goes well with this pasta dish. 









If you find that the sauce is to thick after it is done or if it cooled off waiting for the pasta, then you can add more milk or the water from the pasta pot.  












I like to mix everything in a bowl but it will turn out just as awesome a dish if you just added it to the top.  








Try it with other types of pasta, my favourite is spaghetti but I did to many videos with it and I decided to use more of a variety.

Pizza Margrita - Party Time



Pizza Margrita - Party Time

This is just an awesome pizza that�s so simple to make and it looks great when you put it on the table, your friends  will love you for it.  I made the simple version and added just a few simple items to it, for I like the taste of the good grade olive oil and fresh basil to come through. Sometimes simplicity is the best.


Go ahead and add whatever you like and make it your way and please let me know how it turned out.

Recipe....

1 1/2  Cups - 550 All purpose  flour.

1 Tsp. - Active yeast
1 to 3 Tsp. - Olive oil (parts)
1/2 Cup - Water
1 Tsp. - Sugar
1/2 Tsp. - Salt

More water as needed.


Topping;
-  Tomato sauce
-  Mozzarella cheese
-  Fresh basil
- Parsley

Options;
- Sweet Peppers
- Sun dried tomatoes
- Onions



 Makes a 12 in. Pizza

By boiling your fresh tomato's for about five minutes it  will break down the fibers  and make it release most of it's juices from it. If you are using a metal strainer then use a utensil that will not be rubbing and scraping on metal to metal. 








There is really nothing better then making your own tomato sauce from fresh tomato's. Now at this point add anything you want to the sauce and make it your own.











Remember that we do not want the sauce to thick or watery. To thick then it will dry out, to thin and it will over wet the dough and make it it soggy. I usually add the sauce to about half an inch up to the edge so in this way I get a nice crunch on the pizza.








Awaaa !!! the Mozzarella cheese, I like it to be fresh and I cut it in about 1/4 inch pieces for in this way I get a different taste in every-bite, form the awesome crust, the sauce and the combination of them all. Now if you want you can still shred the cheese and add it more evenly all around.





Any way you cut it, it will always turn out awesome and your Family and friends will love you for it. Do not forget to make some extra for it will go really fast.

Got that  Party coming  or Gathering with your Family and Friends, well  how about  a simple fast recipe of  something  spicy  that will make everyone praise you,  Deviled Eggs.

Where can you get something that cook�s up really fast and all you need is some boiled eggs  and sauce, put that together and �bang� your done,  now watch all the smiling faces that come with it.

The only problem you will have here is making enough for they will gobble it up,  always make extra for you will need it.

Recipe...

6 Eggs

1/3 Cup - Bacon bits
1/4 Cup - Mayo
1/2 Tsp. - Vinegar
1/2 Tsp. - Sugar 
1/2 to 1 Tsp. - Mustard  
1 Tbsp. - Pepper sauce or hot sauce. 
Paprika topping   

Options;
1/2 Tsp. - Chili powder

This mixture is really fast and easy to make. Try to not to make it to thick because as you keep it in the fridge it will harden up more and become very firm. 









Do not worry to much about the shape of the egg nor if it is not 100% perfect. Once it's put all together it will look awesome and they will disappear really fast.  









Add your favourite bacon from honey and maple  to ceder cured, any way you make  it will turn out good and everyone will love you.

Pizza Apple Dessert - Really Awesome


Can we call this a pizza, does it look like one, you bet-yeah  it does.  Just watch your Friends and Families  eyes become wide open when you come with it to the table.  The  crunch  of the  pizza  with the full flavors of the  saut�  apple�s, well it�s just  mmm mmm  Good.


Try it and let me know how it turned out, also try it with different toppings  for it�s all �just awesome�.

In this pizza pie you can remove the apple skins or leave them on, either way it still will be awesome. I like the smooth taste when the skins are removed and I feel it give off a better texture and taste. 







If you you want a more of a crunch with your apple slices then slice them a 1/4 of an inch, but to get a more soft  slice with the apple's then slice them down to 1/8 of an inch. Try them both way and see which way you would prefer.









Keep and eye on the temperature settings. Bake it in very hot oven say around  400 degrees  for anywhere from 10 to 12 minutes.  There is a big different's between a electrical and a gas stove, even if you settings are the same.  

                                                                                Add other toppings to it like I did here, I added icing sugar but add it just before you serve it because it will dissolved in a few minutes into the apples, but it does have the wow factor when you present it to the table.

Cheddar Potato  Puffs  - Party Time

This is just awesome recipe for  your Family, Friends, Parties or a large gathering. So simple to make and you can use really any different types of cheese.  Also by added  combinations of cheese,  sour cream with chives or  parsley as topping  will make it look outstanding and  appetizing. 

You can also make some extra and keep it in the fridge  for when they are all gone and they will be gone very fast,  you will have some more ready to pop into the oven.   After all it sooooo easy,  just add four  main ingredients into the same bowl and �bang� you are done.

Recipe...

3 Cups - Potatoes

1 Cup - Cheddar cheese 
1/2 Cup - Sour cream
1 Tbsp. - Parmesan cheese 
2 Tbsp. - Chives 
2 - Eggs

Alternatives...
- Any cheese
- Parsley

Fill up the mixture to about a 1/4 of an inch from the top, but you can fill it all the way if you want Remember that it will  settle itself as it bakes and will rise. During the baking you should keep an eye on it for all ovens are not the same and it could dry out or burn.  









Add some extra cheese top the top when the potato puff is hot so it will melt a bit and stick to the top and not fall off when being removed from the backing tray. If you find that some of the puff's are sticking and not coming out, then you can use a toothpick to move around the puff to loosen it without scratching your tray.  








Try it with different topping and see how many varieties and combinations you can come up with. Here I just add some extra sour cream to the top and I have to say it looked good. On one I even added some hot sauce to one to try it out and it was just great. Please let me know how yours turned out.

Lazy Mans Stir-Fry - Fast And Easy

I came home from having 3 beers ,  I was a bit tired form the Party and was really hungry, but too lazy to cook.  So by just looking around  here and there in my Kitchen,  an idea came to me. With this   the �Lazy Man�s Stir-fry�  was born.

What a great and super fast  recipe when you need  something in a hurry and you have no idea what you want. With a stir-fry  all you need  is to find anything in your  cupboards or fridge form  veggies  to leftover meats and you have a meal.

I find with the stir-fry  it all goes well  with really any kind  of herbs, spices and  sauces all in one fry-pan, all goes in, add  corn starch or flour with water and presto, sauce.  Now keep  looking in your cupboards for  any type of  rice or pasta, it all goes well.  Now you do have the option to fry the  rice and pasta with a little oil in the pan and add then add  your stir-fry to it, but I like it just the way it is.

Base's...
1 Egg
2 Tbsp. - Milk

1/3 Cup - Water
1 Tbsp. - Soya

Can you use Chopstick, I do but after awhile my fingers get tired and then I have to switch over to a fork.  Someday I guess I will have to practise it more and see if I can get to the point where I can pick-up a single piece of rice. 









I like my Stir-fry with a lot of fresh herbs and for me it has to have a good dose of hot sauce, now that's just awesome.

Pizza Procottio With Arugula


Pizza  Procottio With  Arugula

Ahh the pizza, I know that I have not done a recipe for it, I just kept making them and have my friends and Family gobble them up.  So  I figured  that all the cooking channels  were making them  and  no one would  take interest  in another pizza video.

 Now I have to say that this is my signature pizza and everyone�s  favorite here  around me.  I just love to make this one with a stone-ground flour because it gives a really nice texture and taste.  Also by lowering the amount of yeast I get it to the firmness  I want.

I did not use any tomato sauce because I wanted  it to  have a more of a crisp clean taste of the arugula with  the full flavor of the prosciutto coming through with a hit of saltiness. Now if you want to use a tomato sauce then you can  boil  say about two tomatoes and then smash them and then strain them  into a bowl. Add salt, dash of sugar, pepper  and a drop of virgin olive oil and there you go, tomato sauce�

I know this will be your best pizza that your family and friends will enjoy.

Recipe....

2 Cups - 50/50 whole grain stone-ground flour.

1 Tsp. - Active yeast
3 to 3 Tbsp. - Olive oil (parts)
1/4 Cup - Beer
1 Tsp. - Sugar
1/2 Tsp. - Salt

Water as needed.

Topping;
-  Procottio
-  Arugula
-  Parmesan cheese

Options;
- Tomato sauce
- Sweet Peppers
- Sun dried tomatoes
- Onions

Alternative;
- Wholewheat or white flour.
- 2 1/2  Tsp. - Active yeast for more rise.

I added  only 1 Tsp. of Yeast to the dough because I want a more firm pizza and this way there is less then a rise. Now if you like a more airy  dough then add up to 2 1/2 tsps of yeast and let it rise all the way. 










A good grade olive oil can make the different's between a  awesome taste or just a regular "it's ok" taste. Sprinkle it on the spread out dough but try not to over do it and have the whole thing covered.   










The saltiness of the  Procottio goes just great with the subtle  taste of olive oil. Add different  herbs to the pizza and see how you can enjoy it more.











Make sure that you let the pizza cool off for about  5 mins just enough in order not to dry out the procottio and  not to cook or over heat the arugula.











Make sure that after it cools down that you get it to the table right after you add your toppings, because of those hungry Friends and Family. They will not be able to wait with the aroma of this pizza..





lol !!  Well this was the only thing left of the two pizzas after my Girlfriend and I got a hold of them.. Trust me, Make more for you will need it.

Blacken Chicken  -  Galinha Preta

Galinha Preta  or Blacken Chicken  just a awesome  smooth  delicate taste,  and talk about tender.  The extra  soya  just gives it a perfect  flavor and  a aroma that just fills your house.

I like this dish because you can make it in one pot and you can use any part of the chicken. So go out and see the specials  and make it your way.

I hope you enjoy making this as much as I enjoyed making the video below.

Recipe...

1 1/2 Lbs. -  Chicken thighs or any parts.

4 Tbsp. - Soya  sauce
3 Tbsp. - Cooking oil
2 Tbsp. - Vinegar
1/2 Tsp. - sugar
3 Gloves - Garlic
3 - Bay leaves
1 to 1/2 Cups - Water

Salt and peeper to taste

Remember to have the heat on high as possible to braise  the chicken with the skin down first to get the fat into the pan for that awesome flavour. Now if you want  you can remove the skin and that will make it a more of a low-fat meal. 











After braising keep the heat  down on medium low to slowly bring all those juices to the chicken and by  slow  cooking it will give a more tender meat that will melt in your mouth. This dish can also be baked in an oven proof dish on a hot oven for about 25 to mins. 










I know you and yours will enjoy this awesome dish. So easy and done really fast and easy all done in one pot. Please make extra because you will need it, because it will go fast.
